Chicken Carbonara

  • 300g pasta

  • 2 chicken breasts

  • 200g ham/bacon

  • 3 eggs

  • ½ cup parmesan cheeses, grated

  • 2 tablespoon extra virgin olive oil

  • salt & black pepper to taste


  • Cook pasta.

  • Slice chicken breasts into 3 sections each, cook on BBQ along with ham/bacon.

  • Crack the eggs in a small bowl and add grated cheese. Whisk until blended, then set aside.

  • Chop cooked chicken and ham/bacon into smaller pieces.

  • Drain pasta, save some of the water. Toss pasta into large saucepan, add chicken and ham/bacon and stir. On low heat, pour egg and cheese mixture over the pasta/chicken/ham and stir constantly. Ensure the egg and cheese mixture coats the pasta/chicken/ham and doesn’t simply become scrambled eggs.
