Chicken Lemon Bake

Ingredients

  • 1/3 cup lemon juice

  • 1/3 cup butter, melted

  • 2 tsp dried thyme leaves

  • 400 grams chicken breast fillets

  • salt

  • pepper

  • 8 slices lemon

Directions

  • Preheat oven to 220C.

  • Add lemon juice, melted butter and thyme to a mixing bowl and stir to combine.

  • Use a pastry brush to brush mixture over chicken and then season with salt and pepper.

  • Top chicken with 2 slices of lemon per serve and place in a baking dish. Bake in oven for 15 – 20 minutes or until chicken is cooked through. Baste chicken in lemon butter mixture during cooking for extra flavour.

  • Allow chicken to rest for a few minutes once cooked.
