Satay Chicken

Ingredients

  • 1 onion diced

  • 1 garlic clove crushed

  • 1 kg (fillets) chicken

  • 2 tbs soy sauce

  • 1 teaspoon curry powder

  • 5 tbs peanut butter

  • 2 teaspoon Worcestershire sauce

  • 1 tbs honey

  • 2 teaspoon chilli sauce

  • 2 cups hot water

  • 1 capsicum sliced optional

  • 1 splash oil for frying

Directions

  • Fry onion, garlic and capsicum in a little oil. Put rice on to cook.

  • Add chicken and fry for 2 minutes each side.

  • Add soy sauce, curry powder, peanut butter, Worcestershire sauce, sugar and chilli sauce.

  • Add hot water and combine.

  • Simmer for approximately 20 minutes until chicken is cooked.

  • Steam broccolini and snow peas
