Chicken Lemon Bake
Chicken breast brushed with lemon juice, melted butter and dried thyme, topped with lemon slices and baked until juicy. A five-minute-prep midweek dinner.

Preheat oven to 220C.

Add lemon juice, melted butter and thyme to a mixing bowl and stir to combine.

Use a pastry brush to brush mixture over chicken and then season with salt and pepper.

Top chicken with 2 slices of lemon per serve and place in a baking dish. Bake in oven for 15 – 20 minutes or until chicken is cooked through. Baste chicken in lemon butter mixture during cooking for extra flavour.

Allow chicken to rest for a few minutes once cooked.
