Vietnamese Caramelised Pork Bowls
Pork mince stir-fried with ginger, garlic and chilli, then caramelised in brown sugar and fish sauce until sticky. Served over jasmine rice in ten minutes.

Heat the oil in a large skillet over high heat.

Add the onion, ginger, garlic and chilli and cook for 2 minutes.

Add the pork mince and cook for 2 minutes until white all over, breaking up the meat with a wooden spoon.

Add the sugar and fish sauce. Stir, then leave it to cook without touching until juices cook out and pork caramelises — about 2 minutes. Stir and leave again for 30 seconds. Repeat twice more until caramelised to taste.

Serve over jasmine rice, garnished with sliced green onion and optional cucumber and carrots on the side.
